Ren Chai is a Chinese restaurant that offers Sichuan and Cantonese specialties in Amman. It is situated in a contemporary villa with an outdoor terrace, used during fair weather, in the midst of the fourth circle. The cuisine is a combination of both Sichuan and Cantonese delicacies that are based on very different methods of cooking. Where the Sichuan cuisine, from a region in the middle of China, includes hot and spicy flavors, variations of sour, hot, and sweet, bitter and aromatic blends. The Cantonese method of cooking, from a region southern of China, however is based on minimal flavoring and uses ingredients such as sugar, salt, soy sauce, sesame oil, vinegar, cornstarch, rice wine and scallions, garlic and a few spices including ginger, black pepper and star anise sparingly. The Cantonese cooks are known to usefresh constituents for their primary ingredients but tend to use preserved components as well. The Sichuan region on the other hand is called the “heavenly country” because of plenty of natural resources in the area and hence the extensive use of fresh herbs. Sesame Toast is typically found in the Cantonese cuisine and we thought we’d share the recipe since we all love it so much, enjoy!
Sesame Toast
Ingredients:
600g ground shrimp
1 loaf toast bread(sliced)
Sesame seeds
1 tablespoon sesame oil
1/2tablespoon salt
1 pinch sugar
3 tablespoon cornstarch
1 pinch white pepper
1 pinch baking soda
50g green peas
Method
Peel the shrimp
and debone
Thoroughly wash
and mince with meat grinder
Season with salt, monosodium glutamate, sugar, white pepper and
sesame oil
Thoroughly mix
Cut toast into slices of 6cm x 4cm
Spread the minced shrimp on side of the bread
Place two green peas on each side
Dip the shrimp side of the bread into sesame seeds
Cooking
- Preheat frying panbefore placing your frying oil, wait until its moderately hot
- Place the sesame shrimp side of the toast into the oil first, when golden brown turn over and repeat
- Make sure the fire is controlled and doesn’t over heat
